Ingredients (3 Portions):

  • 300g fideua noodles
  • 500g mixed seafood (shrimp, squid, mussels)
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 ripe tomato, grated
  • 1 teaspoon smoked paprika
  • 1 teaspoon saffron threads
  • 1 liter fish or vegetable broth
  • Olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large paella pan over low heat.
  2. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté until softened.
  3. Add the grated tomato, smoked paprika, and saffron threads. Stir well to combine.
