🛒 Ingredient Blueprint
- The Grain: 300g Paella Rice (Bomba or Senia)
- The Proteins:
- 300g Salmon fillet (skinned, cut into thick 3cm cubes so it doesn’t overcook)
- 250g Squid (cleaned, cut into rings and tentacles)
- The Aromatics (The Marca):
- 1 Medium onion, finely chopped
- 3 Cloves of garlic, minced
- 1 Red pepper, diced or cut into strips for presentation
- 2 Grated or finely chopped tomatoes (pulped, no skins)
- The Liquid Gold:
- 900ml Rich Seafood Stock (kept boiling hot in a side pot)
- Olive oil, salt, and a pinch of saffron (optional, for that classic hue)
🍳 Execution & Cooking Sequence
1. The Sear (Sellar)
Heat a generous swirl of olive oil in your paella pan over medium-high heat.
- Lightly sear the salmon cubes for about 1 minute just to get some color. Remove them immediately and set aside—we want them juicy at the end.
- Add the squid and red pepper strips. Sauté until the squid turns opaque and the peppers get a slight char (about 3–4 minutes). Remove the peppers for later decoration, but leave the squid in the pan.
2. The Base (Sofrito)
Turn the heat down to medium.
- Toss in the chopped onion and garlic. Sauté slowly with the squid until the onions are completely translucent and sweet.
- Pour in the chopped tomatoes. Cook this mixture down patiently until the water evaporates and the tomatoes darken into a thick, jammy paste. This is the foundation of your flavor.
- Add 1/2 a teaspoon of Paprika
3. The Infusion
- Pour the 900ml of seafood stock directly into the pan over your tomato and squid base.
- Let it come to a vigorous, rolling boil for about 5 minutes so the flavors of the North Sea stock fuse completely with the aromatics. Taste the broth here—it should taste slightly oversalted, as the rice will absorb a lot of it.
4. The Final Addition: The Rice
⚠️ Crucial Timing: As requested, the rice goes in now that the liquid environment is fully established.
- Add the Rice: Sprinkle your 300g of paella rice evenly across the boiling pan. Shake the pan by the handles to distribute the grains uniformly. Do not stir the rice again after this step to allow the starch to lock and form a perfect crust.
- The Countdown (18 Minutes Total):
- First 8 minutes: Cook on high heat. The liquid should bubble rapidly. Arrange your reserved red pepper strips beautifully on top.
- Next 10 minutes: Drop the heat to low. The liquid will begin to disappear below the level of the grains.
- The Last 3 minutes: Gently tuck your seared salmon cubes into the surface of the rice so they steam through perfectly without drying out.
5. The Socarrat & Rest
If you want that legendary caramelized bottom crisp (socarrat), turn the heat up to high for the final 60 seconds of cooking. Listen closely—you’ll hear a distinct crackling sound and smell a rich, toasted aroma (not burnt!).
Kill the heat, cover the pan with a clean cloth or foil, and let it rest for 5 minutes before serving. This settles the moisture and finishes cooking the center of the grains.
